After a long day’s work, there’s no better way to end the day than sitting down to a delicious and more importantly, nutritious meal. One of my favorite recipes to cook up and enjoy is savory blackened salmon with mango salsa over a bed of Spinach. This dish is also quite tasty over a bed of brown rice or quinoa if you’re more partial to carbs. Here are the ingredients to whip up your own flavorful dish:

Mango Salsa Ingredients

2 Mangos
1/2 cup of red onion
1/2 red or green bell pepper
1/4 cup of Cilantro
Juice of 2 limes
Kosher salt (big pinch)

I like to make my salsa ahead of time to allow the ingredients to marinate together and bring out the flavor of both the  salsa and the salmon. This refreshing mango salsa is easy to make! Just chop up all the ingredients and toss them  together. I LOVE cilantro as it gives the salsa the fresh and flavorful bite it needs to stand out.

 2 4-6oz Salmon fillets
 Tony Chachere’s Creole Seasoning
 Oil or butter

 My favorite fish is salmon! It is rich in flavor and is a good source of protein; 4 ounces has about 22 grams of protein.  This super fish also contains omega 3 fatty acids which are crucial for lowering risks of heart disease, arthritis, and  more! Wild salmon has more omega 3 than farmed, so when in doubt go for wild salmon. For seasoning, I love using  Tony Chachere’s Creole seasoning, it adds a unique blend of spices and flavor to the salmon. If you’d like to measure the  seasoning by your particular tastes, you can make your own blackened seasoning using paprika, cayenne powder, thyme, and salt or you can use your go-to seasoning.

Once the salmon is cooked to your liking and the mango salsa is tossed, you’re ready to eat! Place the salmon over a bed of fresh spinach (or rice) and top it all off with sweet and tangy mango salsa. It’s an easy meal to make and takes little to no time. Bon appétit!
