The cancer-fighting and depression-fighting antioxidant, betalain, found in beets gives the vegetable its vivid color. Beets are a rich source of vitamins and minerals including but not limited to potassium, fiber, iron, and folic acid. Pumpkin is a very low calorie vegetable that will fill you up.
